Taste & Tell: Blueberry + Banana Oatmeal

An easy, quick breakfast (that I probably eat now most every morning) is banana/blueberry oatmeal. I used to be slightly obsessed with consuming eggs each morning ..but my taste buds have shifted. Oatmeal is seemingly more filling (in my opinion) and you can make it completely the way you like!

I have been using a cup of quick oats and add cinnamon, butter, fresh blueberries and fresh bananas. I occasionally will make it super healthy and add in flax and some other grains..but that's a rare occasion!

I just recently started a new job as a stylist/photographer and website editor for Petal Boutique...and that mixed with nannying has made my weeks booked full from 8 to 6 every day. I love the hustle and bustle ..and having two jobs I truly enjoy is such a reward.. but finding efficient & sufficient meals is crucial.

I clearly do not have time to whip up scrambled eggs and a side of bacon every morning so oatmeal has been a very satisfying replacement! I have also been eating a Chobani yogurt (along with) for extra protein to keep me going till lunch. One thing I will say ..I have been feeling sooo much better and have twice the energy I had before this new breakfast obsession.

Here is a recipe for one particular style of this oatmeal I found from "Iowagirleats.com"


1/2 cup old fashioned oats
1/2 cup water
1/2 cup milk (I used unsweetened vanilla almond breeze)
1 small banana
1 Tablespoon brown sugar
1/2 teaspoon vanilla
1/4 cup fresh blueberries
1 Tablespoon chopped walnuts


Add oats, water, milk, and 1/2 the banana thinly sliced into a saucepan then turn heat to medium. Cook until oats begin to bubble then stir until oats are cooked and creamy, about 3 minutes. Remove pan from heat then stir in brown sugar and vanilla. Pour into a bowl then top with remaining 1/2 sliced banana, blueberries, and walnuts.
