Taste & Tell: Another Stuffed Pepper Recipe!

I don't know about you, but really good southern comfort food is my favorite thing to eat ..always. I am not typically a fancy cook and don't enjoy spending numerous hours to craft a meal that is half filling and to pretty to dig into. Hence why I love a good messy stuffed pepper..filled with ground beef, rice, and some spices that give it extra flavor. 

Here is a recipe, that is pretty basic, but on a busy weeknight it is on par with efficiency and the tastebuds! Enjoy!


Ingredients

2 green pepper (large)

1/2 lb ground beef

1/4 cup chopped onion

15 ozs tomato sauce (divided)

1 cup cooked rice

1/8 tsp salt

1/8 tsp garlic powder

1/8 tsp pepper


Directions

Cut tops off the green peppers and remove any seeds. Place peppers in a large saucepan and cover with water. Bring to a boil and cook for 3 minutes. Then drain and immediately place in ice water...then invert the peppers on paper towels.

In a small skillet, cook beef and onion over medium heat until meat is no longer pink and then drain the excess oils. Remove from the heat and stir in 1 cup tomato sauce, rice, salt, garlic powder and pepper. Spoon the mixture into  each pepper.

Place in an ungreased shallow baking dish. Drizzle with remaining tomato sauce. Cover and bake at 350° for 25-30 minutes or until peppers are tender. Solid serving for 2 which makes for a great date night meal too!!
